WINEMAKING
GRAPES WERE SELECTED PRIOR TO BEING DESTEMMED CRUSHED, THEN, INTO THE TANK, THEY UNDERWENT A 4-5 DAYS OF PRE-FERMENTATION COLD SOAK AT 8°C FOR COLOR AND AROMAS EXTRACTION. ALCOHOLIC FERMENTATION IN STAINLESS STEEL TANKS DURING 10 DAYS AT 25-27°C IN A VERY GENTLE WAY TO AVOID OVER EXTRACTIONS IN ORDER TO ELABORATE A BALANCED WINE, AFTER THIS, THE WINE SPENT 8 DAYS ON HIS SKINS FOR A POST-FERMENTATION MACERATION AND MALOLACTIC FERMENTATION NATURALLY OCCURRED.

AGING
75% OF THE WINE WAS AGED IN FRENCH BARRELS DURING 10-12 MONTH, AND THE REST STAYED ON HIS LEES IN STAINLESS STEEL TANKS TO CONTRIBUTE FRUIT FLAVOURS.
