WINEMAKING
GRAPES WERE SELECTED PRIOR TO BEING DESTEMMED AND CRUSHED, THEN, INTO THE TANK, THEY UNDERWENT A 2 DAYS OF PRE-FERMENTATION COLD SOAK AT 10°C FOR COLOR AND AROMAS EXTRACTION. ALCOHOLIC FERMENTATION TOOK PLACE IN STAINLESS STEEL TANKS AT 25-27°C WITH LIGHTS PUMP OVERS EVERY DAY IN ORDER TO EXTRACT ONLY THE SOFT TANINS AND TAKE ALL THE FRUITINESS OF THE GRAPES, AFTER THIS, THE NEW WINE SPENT 6 DAYS ON HIS SKINS FOR A POST-FERMENTATION MACERATION. MALOLACTIC FERMENTATION NATURALLY OCCURRED IN STAINLESS STEEL TANKS.

AGING
THE WINE WAS AGED ON HIS LEES IN STAINLESS STEEL TANKS IN ORDER TO RETAIN ALL THE FRUITY FLAVOURS, FRESHNESS AND ENJOYABLE WINE CHARACTERISTICS.
