LIGHT YELLOW COLOUR WITH GREEN SHADES, CITRIC AROMAS THAT RECALL LIMES, GRAPEFRUIT, AS WELL AS SUBTLE FLORAL NOTES. A PERFECT BALANCE BETWEEN FRUIT AND ACIDITY WITH SLIGHT MINERAL NOTES, GIVES TO THIS SAUVIGNON BLANC THE TYPICAL FRESHNESS OF THIS VARIETY WITH A PLEASANT LONG FINISH.

HARVEST
100% HAND PICKED IN THE EARLY MORNING DURING THE LAST DAYS OF FEBRUARY AND FIRST DAYS OF MARCH.

WINEMAKING
IN THE WINERY, THE GRAPES ARE STEMMED AND MACERATED IN COLD FOR 4 TO 6 HOURS INTO THE PRESS, THUS REMOVING THE GREATEST AMOUNT OF AROMATIC PRECURSORS. THE JUICE WAS DRAINED OFF AND DECANTED FOR 36–48 HOURS AT 8°C PRIOR TO ALCOHOLIC FERMENTATION IN STAINLESS STEEL TANKS AT CONTROLLED TEMPERATURAS BETWEEN 13–15°C FOR 20 DAYS. AFTER FERMENTATION THE WINE IS CLARIFIED AND BLENDED TO BE BOTTLED SOON.

AGING
THE WINE WAS AGED ON HIS LEES IN STAINLESS STEEL TANKS IN ORDER TO RETAIN ALL THE FRUITY FLAVOURS, FRESHNESS AND ENJOYABLE WINE CHARACTERISTICS.
